1 small onion
1/2 cup butter
1/2 small bell pepper, chopped
1 8-ounce box corn muffin mix
1 cup grated cheddar cheese
1 can cream corn
1 can whole kernel corn
3 eggs
1 8-ounce carton sour cream
Saute onion and peppers in butter. Mix muffin mix, eggs, corns and sauteed mixture. Put in 2-quart baking dish. Spread sour cream and cheese on top. Bake approximately 45 minutes at 350 degrees. (If it appears dry, either lower heat to 325 degrees or don't bake quite as long.)
